Yes it will run just nicely, I have the previous Imac and it's runs GTA IV all maxed out on 2560x1440, no problem. I expect that GTA V will be better optimized then IV so you should be good. Make you Imac dualboot tho, don't use Parallel Desktop or something as it just performs poorly with games. My daughter would like to play The PC version of GTA V mainly to use the mods. IMacs are fairly powerful but big bottleneck with them is the large 4K/5K screen so running games in full resolution can be demanding. Lowering the resolution gives usually a huge fps boost. My old iMac runs GTA V around 50-60 fps in full resolution and on high settings.
